Preheat oven to 375
Grease 2 baking sheets, if necessary.
Heat olive oil over medium-high heat.
1 tbsp Olive Oil
Add garlic and cook for 30 seconds, until fragrant.
3 cloves Garlic
Add ground beef and spices.
1 lb Ground Beef, 1 tsp Ground Cumin, 1 tsp Paprika, Fresh Ground Pepper, Onion Powder, Hot Sauce
Cook, breaking up the beef, until cooked through. 5-7 mins.
Remove from heat, mix in the chopped olives, and set aside.
1/2 cup Pimiento Stuffed Olives
Roll out the sheets of puff pastry to 1/8 inch thickness. Cut each into 6 equal pieces.
2 sheet Puff Pastry Dough
Spoon about a tablespoon of meat mixture into the center of each.
In a small mixing bowl, combine egg and water and lightly beat with a fork.
1 Egg, 2 tsp Water
Paint the edges of the dough with egg wash.
Fold dough over meat and press/twist edges to seal.
Put empanadas on baking sheets with 1-1/2 inches between.
Bake for 18 to 20 mins, or until puffed and golden.
Serve hot. Leftovers can be frozen.
