Melt in your Mouth Roasted Potatoes

Ingredients
- 3 lb Yukon Gold Potatoes
- 6 tbsp Butter melted
- 1 tsp Thyme
- 1/2 tsp Rosemary
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 cup Chicken Broth
- 2-3 cloves Garlic peeled and crushed
- 2 tbsp Fresh parsley chopped
Instructions
- Preheat oven to 475.
- Spray large baking sheet with non-stick spray.
- In small bowl, combine butter and spices.6 tbsp Butter, 1 tsp Thyme, 1/2 tsp Rosemary, 1 tsp Salt, 1/2 tsp Pepper
- Cut potatoes into 3/4 to 1 in. slices, toss in butter mixture and arrange in single layer on baking sheet.3 lb Yukon Gold Potatoes
- Roast for 15 mins, flip potatoes, and roast for an additional 15 mins.
- Remove from oven, flip once more, and add broth and garlic to the pan.1 cup Chicken Broth, 2-3 cloves Garlic
- Roast for an additional 10-15 mins, or until tender.
- Sprinkle with parsley and serve.
