Ingredients

  • 1 tbsp Olive Oil
  • 3 cloves Garlic minced
  • 1 lb Ground Beef
  • 1 tsp Ground Cumin
  • 1 tsp Paprika
  • Fresh Ground Pepper to taste
  • Onion Powder to taste
  • Hot Sauce to taste
  • 1/2 cup Pimiento Stuffed Olives
  • 2 sheet Puff Pastry Dough

Egg Wash

  • 1 Egg
  • 2 tsp Water

Instructions

  • Preheat oven to 375
  • Grease 2 baking sheets, if necessary.
  • Heat olive oil over medium-high heat.
    1 tbsp Olive Oil
  • Add garlic and cook for 30 seconds, until fragrant.
    3 cloves Garlic
  • Add ground beef and spices.
    1 lb Ground Beef, 1 tsp Ground Cumin, 1 tsp Paprika, Fresh Ground Pepper, Onion Powder, Hot Sauce
  • Cook, breaking up the beef, until cooked through. 5-7 mins.
  • Remove from heat, mix in the chopped olives, and set aside.
    1/2 cup Pimiento Stuffed Olives
  • Roll out the sheets of puff pastry to 1/8 inch thickness. Cut each into 6 equal pieces.
    2 sheet Puff Pastry Dough
  • Spoon about a tablespoon of meat mixture into the center of each.
  • In a small mixing bowl, combine egg and water and lightly beat with a fork.
    1 Egg, 2 tsp Water
  • Paint the edges of the dough with egg wash.
  • Fold dough over meat and press/twist edges to seal.
  • Put empanadas on baking sheets with 1-1/2 inches between.
  • Bake for 18 to 20 mins, or until puffed and golden.
  • Serve hot. Leftovers can be frozen.
